We have a 2013 Bounder 35K. It has a Magnum MM 1212 inverter which provides power to a few plugs and TVs.  I'm wondering if I can just leave it on all the time or is there some reason I need it off when I have shore power.

Leave on the inverter charges the house batteries.

In my 2016 Excursion, I have had the batteries stay charged when running down the road or when the generator was running.  The only time I turn the inverter on is when dry camping, and the motor and gen are not running. Have only had the coach 6 months, so my experience may not be representative.  Followup---the inverter box in the basement, is always turned on....the electronic on/off switch above the door (with all the other control switches) is only turned on when I want to run the fridge on battery....
